A quick Mexican-inspired dinner with seasoned beef, melty cheese, and crisp tortillas ready in 30 minutes.

- 1 lb ground beef (85/15 lean)
- 1 medium onion, finely chopped
- 10 oz can Rotel tomatoes with green chilis, with juice
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4–1/2 tsp chili powder, or to taste
- 1/2 tsp fine sea salt, or to taste
- 1/4 tsp freshly cracked black pepper, or to taste
- 15 oz can black beans, with juice (or tri-bean blend)
- 6 flour tortillas (10 inches)
- 2 cups (8 oz) shredded Mexican cheese blend (or mozzarella and cheddar)
Instructions
- Heat a large non-stick skillet over medium-high heat. Add ground beef and cook until browned, about 5 minutes. Skim off excess fat, leaving 2–3 tablespoons.
- Add chopped onion, cumin, smoked paprika, and chili powder. Cook until onion softens and beef browns, 3–4 minutes.
- Stir in tomatoes and beans with juices. Reduce heat to medium-low and simmer until liquid evaporates, 8–10 minutes. Season with salt and pepper.
- Place tortillas on work surface. Sprinkle half the cheese down center, top with 2/3 cup meat mixture, then remaining cheese. Fold sides and roll into burritos.
- Heat oil in a skillet over medium heat. Cook burritos seam-side down, turning occasionally, until golden and crispy, 3–5 minutes. Serve with toppings.
