Description

A quick and flavorful sheet pan dinner packed with smoky Andouille sausage, tender potatoes, and colorful veggies. Perfect for busy nights!

Ingredients

Scale
  • 1 pound white potatoes , cut into ¾-inch pieces
  • 12 ounces Andouille sausage , sliced into rounds
  • 1 small yellow onion , cut into 1-inch pieces
  • 1 yellow bell pepper , cut into 1-inch pieces
  • 12 ounces fresh green beans , trimmed and cut in half
  • ¼ cup extra virgin olive oil
  • 1 tablespoon Cajun seasoning

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) .
  2. Combine Ingredients: In a large mixing bowl, combine the cubed potatoes, sliced sausage, chopped onion, bell pepper, and halved green beans.
  3. Season Generously: Drizzle with ¼ cup olive oil and sprinkle with 1 tablespoon Cajun seasoning . Toss everything together until evenly coated.
  4. Spread on Sheet Pan: Transfer the mixture onto a heavy-duty sheet pan, spreading it out in a single layer. Ensure there’s space between each piece for even roasting.
  5. Roast Until Tender: Bake in the preheated oven for 30 minutes , stirring halfway through. The potatoes should be soft when pierced with a fork, and the veggies nicely caramelized.

Notes

  • Potato Cutting Precision: Ensure your potatoes are cut into pieces no larger than ¾-inch . Larger pieces may not cook fully within the 30-minute roasting time. While there’s some flexibility with the size of onions and bell peppers, the potatoes must be small to guarantee even cooking.
  • Storage Tip: Store leftovers in an airtight container for up to 3–4 days in the refrigerator. For longer storage, freeze the dish in a freezer-safe container for up to 3 months . This makes it ideal for meal prepping or enjoying throughout the week!
