- 2 pounds flank steak or skirt steak
- 1/4 cup fresh lime juice (about 2 limes)
- 1/2 cup orange juice
- 1/4 cup vegetable oil
- 2 tablespoons white vinegar
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 jalapeño, minced
- 4 cloves garlic, minced
- 1 cup fresh cilantro, chopped
- Corn or flour tortillas, for serving
- Optional toppings: diced onion, additional cilantro, lime wedges, avocado slices
Instructions
- Combine lime juice, orange juice, vegetable oil, white vinegar, salt, black pepper, minced jalapeño, minced garlic, and chopped cilantro in a gallon-sized resealable bag or shallow dish. Mix thoroughly.
- Add the flank or skirt steak to the marinade, ensuring it’s completely covered. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight (up to 24 hours).
- Remove steak from refrigerator 30 minutes before cooking. Preheat outdoor grill to high heat (400-450°F).
- Remove steak from marinade, allowing excess to drip off. Discard used marinade. Place steak on hot grill and cook for 5-7 minutes per side for medium-rare, or to your preferred doneness.
- Transfer cooked steak to a cutting board and let rest for 5-10 minutes before slicing.
- Slice thinly against the grain (perpendicular to the visible muscle fibers).
- Warm tortillas on the grill or in a dry skillet. Fill with sliced carne asada and your choice of toppings.
