Description

This authentic carne asada recipe features tender beef marinated in a vibrant citrus blend and grilled to perfection. Loaded with Mexican flavors from fresh cilantro, lime, and subtle heat from jalapeño, it delivers restaurant-quality results with minimal effort. Perfect for tacos, burritos, or served as a standalone protein with your favorite sides.

Ingredients

Scale
  • 2 pounds flank steak or skirt steak
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 tablespoons white vinegar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jalapeño, minced
  • 4 cloves garlic, minced
  • 1 cup fresh cilantro, chopped
  • Corn or flour tortillas, for serving

  • Optional toppings: diced onion, additional cilantro, lime wedges, avocado slices

Instructions

  • Combine lime juice, orange juice, vegetable oil, white vinegar, salt, black pepper, minced jalapeño, minced garlic, and chopped cilantro in a gallon-sized resealable bag or shallow dish. Mix thoroughly.
  • Add the flank or skirt steak to the marinade, ensuring it’s completely covered. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight (up to 24 hours).
  • Remove steak from refrigerator 30 minutes before cooking. Preheat outdoor grill to high heat (400-450°F).
  • Remove steak from marinade, allowing excess to drip off. Discard used marinade. Place steak on hot grill and cook for 5-7 minutes per side for medium-rare, or to your preferred doneness.
  • Transfer cooked steak to a cutting board and let rest for 5-10 minutes before slicing.
  • Slice thinly against the grain (perpendicular to the visible muscle fibers).

  • Warm tortillas on the grill or in a dry skillet. Fill with sliced carne asada and your choice of toppings.
