- 12 oz linguine or spaghetti
- 4 cups rotisserie chicken, shredded or diced
- 2 Tbsp olive oil
- 1 lb button mushrooms, thickly sliced
- 1 medium onion, finely chopped
- 4 garlic cloves, minced
- 4 Tbsp unsalted butter
- 1/3 cup all-purpose flour
- 3 cups low-sodium chicken broth
- 1 Tbsp lemon juice
- 2 cups half & half
- 1 1/2 tsp sea salt, plus more to taste
- 1/4 tsp freshly ground black pepper
- 1/4 cup chopped parsley, plus more for garnish
- 1 1/2 cups shredded mozzarella cheese
Instructions
- Preheat oven to 350°F and butter a 9×13 casserole dish.
- Cook pasta in well-salted water until barely al dente. Reserve 1/2 cup pasta water, then drain.
- In a large skillet over medium-high heat, add oil and sauté mushrooms for 3 minutes until softened.
- Add chopped onions and cook 5-7 minutes until soft and golden. Add garlic and sauté 1 minute more. Transfer to a plate.
- In the same skillet, melt butter and whisk in flour until lightly golden (1-2 minutes).
- Gradually whisk in chicken broth, lemon juice, salt, and pepper until smooth.
- Add half & half and bring to a simmer, whisking until thickened.
- Combine pasta, chicken, mushroom mixture, parsley, and sauce in a large pot. Add reserved pasta water if needed for desired consistency.
- Transfer to prepared casserole dish and top with mozzarella cheese.
- Cover with foil and bake for 20 minutes, then uncover and bake 15 minutes more.
- Optional: broil for 1-2 minutes to create golden spots on top.
- Garnish with fresh parsley before serving your delicious Chicken Tetrazzini.
