  • ½ tablespoon of olive oil or butter
  • ½ cup of sweet onion, finely chopped
  • 1 clove of garlic, minced
  • 2 cups of water or vegetable broth
  • ½ cup of tomato sauce
  • ½ teaspoon of chili powder ((if you like some fired up flavor))
  • ½ teaspoon of paprika
  • ½ teaspoon of cumin
  • ½ teaspoon of salt
  • Pepper to taste
  • 1 cup of uncooked white rice (I prefer a long grain such as basmati)

Instructions

  1. get your instant pot ready
  2. wash the white rice till the water comes clear
  3. once the instant pot is heated add some butter in or oil depending on your taste
  4. let the butter melt and throw the rice in
  5. let the rice to soak the butter and gets a little bit of the brown color so it keeps it crunchy maximum 5-6 minutes
  6. once the rice is ready to add the add all the other ingredients ( tomato, onions, garlic ..)
  7. add the spices and mix everything for about 4-5 minutes, till the smell of  the spices comes strong
  8. you can add tomato paste in case you wanted better colors
  9. once you did all that it’s time to add the broth or simply water ( for each cup of rice add 250 ml of water or broth)
  10. close the pot and cook on high pressure for about 8-10 minutes
  11. release the pressure and let everything to set for 5 minutes  
  12. now time to serve
