These muffins are very easy to make and won’t take you much time to prepare.

You might find recipes with slightly different ingredients, but in general, they are all the same and will give a tasty result.  

First, you will need to crush pecans using your food processor.

Add flour, cinnamon, and sugar and blend everything.

Then add cold butter and mix everything until the mixture will look like small pebbles and refrigerate until ready to use: this will be the streusel for the muffin to add later on.

Now add eggs to a large a bowl and whisk it and then add pumpkin purée, oil, and sugar and mix everything.

After that mixing flour, baking soda, baking powder, salt, ground cinnamon, ground cloves, and ground nutmeg.

Now, as you have two mixtures combine both of them and add chocolate chips to the mix.

Fill the muffin cups until they are ¾ full and fill the rest of the space with streusel.

Bake for about 22 to 28 minutes, let them cool and serve them.

You can serve them with milk, coffee, tea, or any juice.

Can we consider muffins as healthy?

If you are talking about muffins that you buy straight from the store, I do not consider them as healthy as they contain a large quantity of sugar and processed ingredients.

-One of the ingredients that could be considered as unhealthy is butter and oil, which are used in the original recipe. You can replace them with melted coconut oil or just smashed fruits like banana, applesauce or pumpkin purée.

-Reducing the amount of sugar is also critical to make them healthy. You can even eliminate sugar and replace it with a less refined sugar, honey, pure maple syrup, or coconut sugar.

-Chocolate is also another source of sugar. Instead of using just regular chocolate, try using chocolate that has a high percentage of cacao, which has a minimal amount of sugar in it.

Sweetener alternatives

As we have mentioned previously, not relying on refined sugar can make the muffins healthy, and you can use some alternatives to replace it.
Use either coconut sugar, pure maple syrup, or raw honey.
Another alternative is to add extra cinnamon and add vanilla with it.
All that will make it sweet but also make it taste unique and delicious.

Nowadays almost everything could become vegan even meat itself! The muffin recipe includes using one egg which can be substituted with the use of flax egg.

Flax eggs are a mixture of flaxseed meal and water.

If you have cooked many muffins that you cannot eat in one sitting or that you want to save for later on, you can easily keep them by putting them in the freezer.

Once you have cooked the muffins, let them sit and cool for about 1 hour. Put the biscuits in a baking sheet and place them in the freezer for about 1 to 2 hours.

Once they are frozen, put them in airtight containers or freezer-safe bags and keep them in the fridge.

Pumpkin muffins can last in the freezer up to 3 months.

Ingredients

  • 2 eggs
  • 1 cup granulated sugar
  • 1 cup pumpkin puree
  • 3/4 cup vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups semisweet chocolate chips divided use
  • cooking spray

Instructions

  1. Heat the oven to 400 degrees and coat the muffin cups with cooking spray or use the paper liners.
  2. Put the eggs, sugar, pumpkin puree, and oil in a bowl and mix everything until smooth.
  3. In another bowl, add the flour, baking soda, baking powder, pumpkin pie spice, vanilla extract, and salt to the pan and mix.
  4. Add 1 cup of chocolate chips.
  5. Divide the mixture among the 12 muffin cups and sprinkle the rest of the chocolate chips on the top.
  6. Cook for 15 minutes, until lightly browned and a toothpick inserted in the center of a muffin comes out clean.
  7. Let it cool for about 5 minutes in the pan and then place the muffins on a wire rack.
