Easy instructions for how to make delicious, perfect instant pot chicken tortilla soup.

Ingredients

  • Chicken The most important ingredient to make Tortilla soup. The most preferable part to use is chicken breast, or boneless chicken thighs without skin
  • Cream cheese and Cheddar cheese Cheese is what makes the meal creamy. In case you don’t have cream cheese or cheddar cheese, you have a lot of alternatives such as Mozzarella, Mexican blend cheese, Italian blend cheese, gruyere, Provolone or Pepper Jack Cheese. Pick whatever you like
  • Dry Ranch Mix You can either make one at home or buy one from the market. This ingredient makes the meal delicious
  • Chicken Broth It adds extra flavor to the dish, but you can replace it with water if you like. 5 cups recommended
  • Instant Pot You can use whatever size you like depending on your needs. However, a 6 qt instant pot is recommended for this meal.
  • Diced Tomatoes 1 can, preferably undrained
  • 1 medium onion (diced)
  • 4 cloves garlic
  • 2 teaspoons chili powder 2 teaspoons cumin
  • 1 teaspoon paprika & 1 teaspoon coriander
  • Salt and pepper
  • 1 Tablespoon of lime juice

Instructions

  1. To begin with, heat up the instant pot. Add some oil and brown the chicken breasts on both sides, 2 minutes per side, but if you don’t want to, it’s up to you. However, its recommended to brown the chicken.

  2. Put the chicken broth in the pot, and add to it tomatoes, onion, and garlic.

  3. Place the chicken breasts on top and sprinkle the spices on top of it.

  4. Close the pot by placing the lid on and lock it.

  5. Cook the mixture on manual high pressure for about 5 minutes.

  6. You’ll have to let the pressure releases naturally for a period of 10 minutes. After that quick release the rest by using the release lever.

  7. After the pot is depressurized, shred the chicken with two forks.

  8. After shredding the chicken, put the chicken back to the pot, and lime juice and cilantro for extra flavor.

  9. When you finish, you can add whatever you want like diced avocado, shredded cheese, sour cream, tortilla chips or guacamole. You are not obliged to add anything of the mentioned ingredients in this step.
