  • 2 cups chopped yellow onion ((about 1 large onion))
  • 1½ cups chopped carrot ((about 4 medium carrots))
  • 2 celery ribs (finely chopped)
  • 4 cloves garlic (minced)
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt
  • Ground black pepper (to taste)
  • 3 (15.25-ounce/432g) cans black beans (drained and rinsed)
  • 4 cups vegetable broth ((960ml))
  • ¼ cup fresh lime juice ((80ml))
  • Sour cream
  • Fresh chopped cilantro
  • Sliced avocado


Instructions

  1. In a medium Dutch oven, pour in the olive oil and heat over medium. Incorporate the onion, carrot, and celery, cooking while stirring occasionally until the vegetables soften, which should take about 10 minutes.
  2. Add the garlic, cumin, oregano, salt, and a few grinds of black pepper. Stir continuously for 2 minutes.
  3. Incorporate the black beans, broth, and lime juice. Bring the mixture to a boil over medium-high heat, then lower the heat to simmer. Cover and let the soup cook for 25 minutes, stirring occasionally.
  4. For a thicker consistency, blend 2 cups of the soup using a regular blender or an immersion blender. Mix the blended soup back into the pot.
  5. Continue cooking uncovered until the soup thickens to your desired consistency, which will take an additional 10 to 20 minutes. (For a thicker soup, opt for the full 20 minutes.) Serve garnished with avocado, sour cream, and cilantro as desired.

Notes

TECHNIQUE TIP: For a smoother texture, blend half of the soup after cooking.
