  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground cloves (optional)
  • 1/2 teaspoon fine sea salt
  • 2/3 cup vegetable oil or extra light olive oil
  • 3 large eggs (room temperature)
  • 1/2 cup applesauce
  • 1 1/2 cups finely grated and peeled carrots (from 2 medium carrots)
  • 1 cup pecans or walnuts (finely chopped, optional)
  • 1/2 cup golden raisins (or regular raisins, optional)

Instructions

To Make Carrot Cake Cupcakes:

  1. Begin by preheating the oven to 350°F and lining muffin tins with 18 liners. Allow your frosting ingredients to reach room temperature.
  2. In a spacious mixing bowl, mix together the flour, sugar, baking soda, baking powder, cinnamon, cloves, nutmeg, allspice, and salt. Whisk until well combined.
  3. Incorporate the vegetable oil, eggs, and applesauce, stirring until the mixture is thoroughly blended.
