Ingredients
- 1 ½ cups heavy cream (divided)

Instructions
- Melt the chocolate by combining it with ½ cup of heavy cream in a heat-safe bowl. Use a double boiler or microwave in 20-second intervals, stirring until the mixture is smooth. Allow it to cool to room temperature.
- In a separate bowl, whip the remaining heavy cream along with the vanilla extract and salt until soft peaks form.
- Incorporate ⅓ of the whipped cream into the melted chocolate to lighten the mixture. Gently fold in the rest of the whipped cream until the mixture is smooth and silky.
- Divide the chocolate mousse into small glasses or ramekins and refrigerate for a minimum of 1 hour to set.
- Before serving, consider adding extra whipped cream, shaved chocolate, or berries on top if desired.
