Ingredients
- 1¾ cups all-purpose flour ((210g))
- ⅔ cup unsweetened natural cocoa powder ((66g))
- 1 cup granulated sugar ((200g))
- 1½ teaspoons baking powder
- 1 teaspoon baking soda
- ¾ teaspoon salt
- 2 large eggs (room temperature)
- ¾ cup sour cream (room temperature (180g))
- ½ cup whole milk (room temperature (120ml))
- ½ cup vegetable oil ((120ml))
- 2 teaspoons vanilla extract
- 2 cups semi-sweet chocolate chips (divided (360g))
Instructions
- Begin by preheating the oven to 425ºF and prepare a 12-cup muffin tin with paper liners.
- In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk thoroughly to combine.
- In a separate medium bowl, whisk the eggs, sour cream, milk, vegetable oil, and vanilla until everything is well mixed.
- Combine the wet ingredients with the dry ingredients, folding gently with a spatula until just mixed, leaving some flour streaks. Incorporate 1 ⅔ cups (300g) of the chocolate chips and mix until evenly distributed.
- Pour the batter into each muffin cup, filling them nearly to the top, and sprinkle the remaining ⅓ cup (60g) of chocolate chips on top.
- Start baking at 425ºF for 6 minutes, then lower the temperature to 350ºF and bake for an additional 14-16 minutes, or until the centers are set and a toothpick inserted comes out clean. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
TECHNIQUE TIP: To achieve fluffy muffins, avoid overmixing the batter and gently fold the ingredients until just combined.
STORAGE: Keep muffins in an airtight container at room temperature for up to 3 days or freeze for longer shelf life.
SUBSTITUTION: Swap vegetable oil with melted butter for a richer flavor if preferred.
