  • 2 cups semi-sweet chocolate chips (divided (360g))

Instructions

  1. Begin by preheating the oven to 425ºF and prepare a 12-cup muffin tin with paper liners.
  2. In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk thoroughly to combine.
  3. In a separate medium bowl, whisk the eggs, sour cream, milk, vegetable oil, and vanilla until everything is well mixed.
  4. Combine the wet ingredients with the dry ingredients, folding gently with a spatula until just mixed, leaving some flour streaks. Incorporate 1 ⅔ cups (300g) of the chocolate chips and mix until evenly distributed.
  5. Pour the batter into each muffin cup, filling them nearly to the top, and sprinkle the remaining ⅓ cup (60g) of chocolate chips on top.
  6. Start baking at 425ºF for 6 minutes, then lower the temperature to 350ºF and bake for an additional 14-16 minutes, or until the centers are set and a toothpick inserted comes out clean. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
