30 Minute Lemon Garlic Chicken Breasts

Description

A quick and flavorful lemon garlic chicken in a creamy sauce, perfect for any dinner occasion.


Ingredients

  • 2 large boneless skinless chicken breasts, butterflied into 4 pcs
  • ½ teaspoon salt, plus more for seasoning
  • ¼ teaspoon freshly ground black pepper, plus more for seasoning
  • 1 ½ tablespoons olive oil
  • 3 tablespoons butter
  • 1 small shallot, finely chopped
  • 4 cloves garlic, minced
  • ½ teaspoon dried thyme or Italian seasoning
  • ½ cup low-sodium chicken broth
  • 1 cup whole milk or half-and-half, warmed
  • 1 medium lemon, juiced


Instructions

  1. Butterfly the chicken breasts and season with ½ teaspoon salt and ¼ teaspoon freshly ground black pepper.
  2. Heat 1 ½ tablespoons olive oil in a large pan and sear the chicken breasts until golden brown on both sides. Remove from the pan.
  3. In the same pan, melt 3 tablespoons butter and sauté 1 finely chopped shallot until softened. Add 4 minced garlic cloves and cook for 30 seconds.
  4. Pour in ½ cup low-sodium chicken broth and bring to a simmer. Add 1 cup warmed whole milk or half-and-half and ½ teaspoon dried thyme or Italian seasoning, stirring quickly to combine.
  5. Return the chicken to the pan, squeeze the juice of 1 medium lemon over the top, and reduce the heat. Cover and simmer for 10 minutes.
  6. Garnish with fresh herbs and serve with your favorite side dishes.
