- 5 oz spring mix salad greens (142 grams)
- 1/2 lb strawberries, hulled and sliced

Honey Vinaigrette:
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar, or added to taste
- 2 Tbsp honey
- 2 tsp dijon
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or added to taste
Instructions
- Heat a medium skillet over medium heat. Add the sliced almonds to the dry skillet, toasting them while stirring frequently until they become fragrant and golden, which should take about 5 to 7 minutes. Once done, transfer them to a bowl and allow to cool.
- In a measuring cup or mason jar, mix together the ingredients for the dressing and whisk until thoroughly combined.
- In a large serving bowl, place the salad greens. Layer on top the sliced strawberries, red onion, toasted almonds, and crumbled feta cheese.
- Prior to serving, drizzle the dressing over the salad according to taste and toss everything together to ensure the flavors meld.
