Description

A healthy, homemade version of the classic candy bar made with natural ingredients. These no-bake treats combine the natural sweetness of dates with creamy peanut butter, rich chocolate, and crunchy peanuts for an irresistible healthy dessert.


Ingredients

20 Medjool dates, pitted

2/3 cup natural creamy peanut butter, room temperature

3/4 cup semisweet chocolate chips (or milk chocolate for sweeter taste)

1/2 cup peanuts, coarsely chopped

1/4 teaspoon kosher salt (optional)


Instructions

  1. Line a baking sheet with parchment paper.
  2. Pit the dates if necessary and arrange them sticky-side-up in a rectangle shape on the parchment paper.
  3. Cover dates with plastic wrap and use a rolling pin to flatten into an even layer, filling any gaps.
  4. Remove plastic wrap and spread room temperature peanut butter evenly over the date layer.
  5. Melt chocolate chips in the microwave in 30-second intervals, stirring between each, until fully melted (60-90 seconds total).
  6. Pour melted chocolate over the peanut butter layer and spread evenly.
  7. While chocolate is still warm, sprinkle with chopped peanuts and optional salt, pressing gently to adhere.
  8. Refrigerate uncovered until firm (about 1 hour) or freeze for 30 minutes.
  9. Cut into desired-sized bars or squares.
