A healthy, homemade version of the classic candy bar made with natural ingredients. These no-bake treats combine the natural sweetness of dates with creamy peanut butter, rich chocolate, and crunchy peanuts for an irresistible healthy dessert.

20 Medjool dates, pitted
2/3 cup natural creamy peanut butter, room temperature
3/4 cup semisweet chocolate chips (or milk chocolate for sweeter taste)
1/2 cup peanuts, coarsely chopped
1/4 teaspoon kosher salt (optional)
Instructions
- Line a baking sheet with parchment paper.
- Pit the dates if necessary and arrange them sticky-side-up in a rectangle shape on the parchment paper.
- Cover dates with plastic wrap and use a rolling pin to flatten into an even layer, filling any gaps.
- Remove plastic wrap and spread room temperature peanut butter evenly over the date layer.
- Melt chocolate chips in the microwave in 30-second intervals, stirring between each, until fully melted (60-90 seconds total).
- Pour melted chocolate over the peanut butter layer and spread evenly.
- While chocolate is still warm, sprinkle with chopped peanuts and optional salt, pressing gently to adhere.
- Refrigerate uncovered until firm (about 1 hour) or freeze for 30 minutes.
- Cut into desired-sized bars or squares.
